A quick and easy sheet pan recipe featuring salmon and asparagus, infused with lemon and garlic.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 lemons (1 sliced, 1 for juice)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1 pound asparagus or green beans

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the salmon fillets alongside the vegetables on a sheet pan.
  3. Mix olive oil, minced garlic, lemon juice, salt, and pepper in a small bowl.
  4. Drizzle the garlicky oil blend over the salmon and vegetables.
  5. Add lemon slices on top of the salmon.
  6. Bake in the preheated oven for 12-15 minutes until cooked through.
  7. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven for best results.
