Crispy roasted potatoes tossed with creamy feta cheese and fresh herbs, drizzled with zesty lemon juice—a delightful side dish for any meal.

  • 2 lbs new potatoes
  • 1 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1/4 cup fresh herbs (such as oregano or thyme)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the new potatoes into halves or quarters.
  3. Mix the potatoes with olive oil, lemon juice, minced garlic, salt, and pepper until well coated.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Crumble feta cheese over the potatoes and sprinkle with fresh herbs.
  6. Roast in the preheated oven for 25-30 minutes or until golden brown and tender.

Notes
