  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 3 large eggs
  • 1 teaspoon lemon zest
  • 1/4 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Combine the all-purpose flour and salt. Mix until a dough forms.
  4. Press the dough evenly into the bottom of the prepared baking dish.
  5. Bake for 15-20 minutes or until the crust is lightly golden.
  6. Whisk together the sweetened condensed milk, fresh lemon juice, eggs, lemon zest, and baking powder until smooth.
  7. Pour the lemon filling over the baked crust.
  8. Bake for an additional 20-25 minutes until the filling is set.
  9. Cool completely in the pan, then dust with powdered sugar before cutting into bars.
