  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. Combine the flour and powdered sugar in a mixing bowl. Cut in the softened butter until the mixture resembles coarse crumbs. Press this mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 15 minutes or until it’s lightly golden.
  4. Whisk together the eggs, granulated sugar, fresh lemon juice, lemon zest, baking powder, and salt until it’s smooth and well combined.
  5. Pour the custard mixture over the crust, spreading it evenly.
  6. Bake for an additional 20-25 minutes, or until the custard is set.
  7. Cool completely before slicing into squares. Dust with powdered sugar before serving, if desired.

Notes

For more intense lemon flavor, use an extra tablespoon of zest. Store leftovers in an airtight container in the refrigerator for up to 3 days.
