A delightful Lemon Curd Tart featuring a flaky crust and a smooth, tangy lemon filling, perfect for any occasion.

  • 1 1/4 cups all-purpose flour
  • 1/3 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 1 large egg yolk
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1/4 cup unsalted butter, cut into pieces

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, powdered sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add the egg yolk and mix until the dough forms.
  3. Press the dough into a tart pan evenly and poke holes with a fork.
  4. Bake for 15-20 minutes or until lightly golden.
  5. In another bowl, whisk together the granulated sugar, eggs, fresh lemon juice, and lemon zest until smooth.
  6. Pour the lemon filling into the baked tart shell and dot with pieces of butter.
  7. Bake for another 20-25 minutes, or until the filling is set.
  8. Allow to cool before serving. Your Lemon Curd Tart is now ready to dazzle!

Notes

For a more festive touch, sprinkle some powdered sugar on top right before serving. Store in the fridge for up to 4 days or freeze for up to 3 months.
