A refreshing and zesty Lemon Curd Tart that brings sunshine to any gathering.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup powdered sugar
  • 1 large egg
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup fresh lemon juice
  • 2 teaspoons lemon zest
  • ¼ cup heavy cream
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the flour, butter, and powdered sugar until crumbly. Add the egg and mix to form a dough.
  3. Press the dough into a tart pan, then bake for 15 minutes or until slightly golden.
  4. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and salt in another bowl.
  5. Pour the lemon mixture into the baked crust.
  6. Bake for an additional 20-25 minutes until the filling is set.
  7. Cool the tart at room temperature for 15 minutes, then refrigerate for at least 2 hours.
  8. Serve with a dollop of whipped cream and enjoy!

Notes

Use room temperature butter and fresh ingredients for the best flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
