  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Mix the sugar and butter in a large bowl until light and fluffy.
  2. Add the egg, lemon juice, and lemon zest, stirring until well combined.
  3. Combine the flour, baking powder, and salt in a separate bowl, then gradually add to the wet ingredients.
  4. Chill the dough in the refrigerator for about 30 minutes.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop tablespoon-sized portions of dough and roll them into balls, coating each in powdered sugar.
  7. Bake the cookies for 10-12 minutes until crinkled and lightly golden.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack, dusting with more powdered sugar if desired.
