Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix graham cracker crumbs and melted butter until combined; press into the bottom of a lined mini muffin tray.
  3. Beat the cream cheese until smooth, gradually adding powdered sugar; mix well until no lumps remain.
  4. Add lemon juice, lemon zest, and vanilla extract to the cream cheese mixture; beat until combined.
  5. Spoon the cheesecake mixture over the graham cracker base in muffin tray, distributing evenly.
  6. Bake for about 10-12 minutes or until set.
  7. Cool and refrigerate for at least 2 hours before serving.
  8. Top with whipped cream before serving, if desired.
