Delight in these creamy and tangy lemon cheesecake bars, perfect for any occasion.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 cup lemon curd

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9×9 inch baking pan.
  2. Combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of the prepared baking pan.
  3. Beat the cream cheese and 1 cup sugar together until smooth.
  4. Add the eggs, lemon juice, lemon zest, and vanilla extract. Mix until well combined.
  5. Pour the cheesecake mixture over the crust in the baking pan.
  6. Bake for 30-35 minutes, until the edges are set but the center remains slightly jiggly.
  7. Cool to room temperature and refrigerate for at least 4 hours.
  8. Spread the lemon curd over the top of the cheesecake bars.
  9. Cut into squares and serve chilled.

Notes

Serve with whipped cream or lemon zest on top. Store leftovers in an airtight container for up to 5 days.
