Delightful and zesty lemon brownies topped with a sweet-tart glaze, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. Mix the melted butter and granulated sugar together until combined.
  4. Add in the eggs one at a time, mixing well after each addition.
  5. Stir in the lemon zest and lemon juice.
  6. Fold in the dry ingredients until just combined.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Allow to cool before making the glaze.
  10. Whisk together the powdered sugar and lemon juice until smooth for the glaze.
  11. Drizzle the glaze over the cooled brownies and let it set before cutting into squares.

Notes

Store in an airtight container for up to 3 days at room temperature, or refrigerate for up to a week. Can freeze for up to 3 months.
