Delightful lemon blueberry cupcakes that are moist and fluffy, perfect for any occasion.

  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • Zest of 1 lemon
  • 1 cup fresh blueberries
  • Lemon frosting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. Whisk together the flour, baking powder, baking soda, and salt in a mixing bowl.
  3. Cream the softened butter and sugar until light and fluffy in another bowl.
  4. Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract and lemon zest.
  5. Combine the dry ingredients and buttermilk gradually, alternating between them.
  6. Fold in the blueberries gently.
  7. Fill each cupcake liner about 2/3 full with the batter.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Cool before frosting with lemon frosting, if desired.

Notes

For fluffier cupcakes, avoid overmixing once the flour is added. Use fresh blueberries for best results.
