A delightful combination of bright lemon zest and sweet blueberries in a moist bread perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1/2 cup milk
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your loaf pan well.
  3. Whisk together the flour, baking powder, baking soda, and salt.
  4. Cream together the softened butter and sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla, lemon juice, and zest.
  6. Combine the flour mixture and milk with the butter and sugar mixture until just combined.
  7. Fold in the fresh blueberries gently.
  8. Pour the batter into the prepared loaf pan and bake for 50-60 minutes.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve warm with butter or drizzle with a lemon glaze, and can be stored for up to 3 days at room temperature.
