  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 cup fresh blueberries
  • 1/4 cup powdered sugar (for glaze, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in the vanilla, lemon zest, and lemon juice.
  5. Combine the dry ingredients with the wet mixture and mix until just combined.
  6. Fold in the blueberries gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Drizzle with glaze if desired.
