Delicious lemon bars featuring a buttery shortbread crust and a tangy lemon filling, perfect for any occasion.

  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper for easy removal.
  2. In a bowl, mix together the flour, softened butter, powdered sugar, and salt until the mixture is crumbly. Press this mixture firmly into the bottom of the prepared pan to form a deliciously buttery crust.
  3. Place the crust in the preheated oven and bake for 15-20 minutes or until it is lightly golden and smells wonderfully aromatic.
  4. In another bowl, whisk together the granulated sugar, eggs, lemon zest, lemon juice, and baking powder until the mixture is nice and smooth.
  5. Pour the luscious lemon mixture over your baked crust, spreading it evenly to ensure every bite is filled with that zingy goodness.
  6. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and a light golden hue appears on top.
