Deliciously tangy lemon bars with a buttery crust, perfect for summer picnics and gatherings.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. Mix the flour and powdered sugar until combined. Cut in the softened butter until resembling coarse crumbs.
  3. Press the mixture firmly into the bottom of the prepared dish to form the crust.
  4. Bake the crust for about 15 minutes, or until lightly golden.
  5. Whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
  6. Pour the lemon mixture over the warm crust.
  7. Bake for another 20 minutes, or until the lemon layer is set.
  8. Cool completely in the dish before cutting into squares. Dust with powdered sugar before serving.

Notes

Use fresh lemon juice and zest for best flavor. These bars can be served chilled or at room temperature.
