A classic Key Lime Pie that combines the tangy brightness of key limes with a buttery graham cracker crust and a light, fluffy topping.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup key lime juice (fresh or bottled)
  • 1 tablespoon lime zest
  • 1/2 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • Lime slices for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until well combined, then press into a 9-inch pie pan.
  3. Bake the crust for 8-10 minutes until golden. Remove and let it cool.
  4. Whisk the egg yolks until thick and pale. Gradually whisk in the sweetened condensed milk, then add the key lime juice and lime zest.
  5. Pour the filling into the cooled crust and bake for another 15 minutes. Remove and let it cool completely.
  6. Whip the heavy cream with powdered sugar until stiff peaks form.
  7. Spread or pipe the whipped cream on top of the cooled pie. Garnish with lime slices and chill for at least 2 hours before serving.

Notes

Serve with fresh berries or vanilla ice cream for an enhanced experience. Best enjoyed fresh for the first two days for optimal crust texture.
