A refreshing and creamy Key Lime Pie with a buttery graham cracker crust, perfect for summer gatherings.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 teaspoon lime zest
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter until well combined.
  3. Press the mixture into the bottom and up the sides of a pie pan.
  4. Bake the crust for about 10 minutes, then let it cool.
  5. Whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth.
  6. Pour the filling into the cooled crust and bake for another 15 minutes.
  7. Remove from the oven and let it cool, then refrigerate for at least 3 hours.
  8. Whip the heavy cream with powdered sugar until stiff peaks form.
  9. Spread the whipped cream over the chilled pie and serve.

Notes

For a more intense lime flavor, feel free to add a splash more of key lime juice. This pie can also be adapted to be gluten-free.
