Instructions

  1. Creaming the butter and sugars: In a large mixing bowl, combine ½ cup softened unsalted butter, ¾ cup granulated sugar, and ¼ cup light brown sugar. Beat the mixture until light and fluffy, about 2 minutes.
  2. Mixing in the egg and flavor: Add 1 large egg and 1 teaspoon of vanilla extract. Mix until fully combined and fold in 2-3 teaspoons of key lime zest.
  3. Combining the dry ingredients: In a separate bowl, whisk together 1¾ cups of flour, ½ teaspoon baking soda, and ½ teaspoon salt. Gradually add to the wet ingredients, mixing until just combined.
  4. Chilling the dough: Chill the dough for about 30 minutes if you have time to enhance flavor and prevent spreading.
  5. Baking: Preheat your oven to 350°F (175°C). Scoop chilled dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake for 12-15 minutes until edges are lightly golden.
  6. Making the zesty glaze: While cookies cool, whisk together 1 cup powdered sugar, 1 tablespoon key lime juice, 1 tablespoon milk, and a pinch of salt until desired consistency.
  7. Drizzling the glaze: Once cookies are completely cooled, drizzle the key lime glaze over each cookie and sprinkle with ½ teaspoon key lime zest.
