A creamy Key Lime Cheesecake with a zesty filling and buttery crust, perfect for summer occasions.

  • 1 ½ cups graham cracker crumbs
  • ½ cup sugar
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup key lime juice
  • 1 tablespoon lime zest
  • Whipped cream (for topping)
  • Lime slices (for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix together graham cracker crumbs, ½ cup sugar, and melted butter until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan firmly to create an even layer.
  4. Beat the cream cheese and 1 cup of sugar together until smooth and creamy.
  5. Add in the eggs one at a time, mixing well after each addition.
  6. Stir in the key lime juice and lime zest until fully incorporated.
  7. Pour the cream cheese mixture into the prepared crust, spreading it out evenly.
  8. Bake in the preheated oven for 50-60 minutes, or until the center is set.
  9. Let the cheesecake cool in the oven with the door cracked for about an hour.
  10. Transfer to the fridge and chill for at least 4 hours.
  11. Top with whipped cream and garnish with lime slices when ready to serve.

Notes

Store leftovers in the refrigerator for up to 5 days. For longer storage, freeze slices individually for about 3 months.
