A delicious low-carb pizza featuring a crispy almond flour crust topped with creamy spinach and artichokes, perfect for satisfying pizza cravings.

  • 1.5 cups shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 3/4 cup almond flour
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1 cup canned artichoke hearts, drained and chopped
  • 2 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup full-fat sour cream
  • 1/4 cup mayonnaise
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Make the Crust: In a mixing bowl, combine 1.5 cups of shredded mozzarella cheese, 2 tablespoons of cream cheese, 3/4 cup of almond flour, 1 large egg, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of Italian seasoning. Mix well until it forms a dough-like consistency.
  2. Preheat your oven to 425°F (220°C). Once the dough is prepared, place it on a baking sheet lined with parchment paper. Using your hands or a rolling pin, shape it into a circle about 1/4” thick, creating a rustic pizza base.
  3. Bake the crust in the preheated oven for about 10-12 minutes or until it turns golden brown.
  4. Prepare the Topping Mix: While your crust is baking, combine the canned artichoke hearts, chopped spinach, 1/2 cup full-fat sour cream, 1/4 cup mayo, 2 minced garlic cloves, salt, and pepper to taste in a medium bowl. Mix well until everything is coated and nicely incorporated.
  5. Top the Pizza: Once the crust is out of the oven, sprinkle 1 cup of shredded mozzarella cheese evenly over the base. Spread the spinach and artichoke mixture over the cheese layer, followed by an even distribution of 1/4 cup grated Parmesan cheese on top.
  6. Return the pizza to the oven and bake it for an additional 10-12 minutes, until the cheese is melted and bubbly, and the edges are golden.
  7. Allow the pizza to cool for a few moments before slicing.

Notes

For a crispier crust, pre-bake it longer and let it cool slightly before adding toppings. Leftovers can be stored in an airtight container for up to 3 days.
