  • 2 pounds pork belly, diced into 1-inch pieces
  • 1 tablespoon avocado oil
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon cayenne pepper (optional)
  • 1/4 cup no-sugar-added barbecue sauce
  • 1/4 cup beef stock
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Combine pork belly with avocado oil, smoked paprika, garlic powder, onion powder, sea salt, black pepper, and cayenne pepper.
  3. Arrange seasoned pork belly pieces on a baking sheet lined with foil.
  4. Bake for 2 hours, flipping halfway through.
  5. Pour barbecue sauce, beef stock, and apple cider vinegar over baked pork belly.
  6. Return to the baking sheet and bake for an additional 30 minutes.
  7. Let rest for 10 minutes before serving.
