A low-carb twist on the classic Reuben sandwich, these crispy roll-ups combine savory corned beef, tangy sauerkraut, and creamy Swiss cheese, all wrapped in fresh lettuce.

Ingredients

  • 8 oz corned beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 8 oz Swiss cheese, sliced
  • 4 large lettuce leaves (Romaine or iceberg)
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 cup almond flour
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the mayonnaise and Dijon mustard until well combined.
  3. Lay out the lettuce leaves and spread a thin layer of the mayo mixture on each leaf.
  4. Layer the corned beef, sauerkraut, and Swiss cheese on each lettuce leaf.
  5. Roll the lettuce tightly around the filling, securing it with toothpicks if necessary.
  6. Whisk the eggs and season with garlic powder, onion powder, salt, and pepper.
  7. Dip each roll in the egg mixture, then coat with almond flour.
  8. Place the roll-ups on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown and crispy.

Notes

Serve with a side salad or keto-friendly dipping sauce. Store leftovers in an airtight container in the fridge for up to 3 days.
