Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 3–4 flavors of Jello gelatin powder (e.g., strawberry, lime, grape)
  • Additional sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the large egg until fully combined.
  4. Whisk the all-purpose flour, baking powder, and salt in another bowl.
  5. Gradually mix the dry ingredients into the butter mixture until a dough forms.
  6. Divide the dough into 3–4 equal parts and add Jello to each to create vibrant colors.
  7. Chill the dough portions in the refrigerator for 15–20 minutes.
  8. Roll the chilled dough into balls, then roll each ball in granulated sugar.
  9. Bake for 8–10 minutes until edges are set and tops are crackled.
  10. Cool on the sheet for 2 minutes before transferring to a wire rack.

Notes

Use softened butter for the best texture and chill the dough to prevent spreading.
