A delicious dish that combines spicy jalapenos with creamy cheese and tender chicken, perfect for family dinners.

  • 4 chicken breasts
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled cooked bacon
  • 2 jalapenos, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs
  • Olive oil or cooking spray

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix together the cream cheese, cheddar cheese, crumbled bacon, diced jalapenos, garlic powder, onion powder, and a bit of salt and pepper until well combined.
  3. Slice a pocket into each chicken breast, ensuring a generous space for stuffing.
  4. Fill each chicken breast pocket with the cheese mixture.
  5. Dip each stuffed chicken breast into breadcrumbs and coat evenly.
  6. Place the coated chicken in a greased baking dish, drizzle with olive oil or cooking spray, and bake for 25-30 minutes until cooked through.
  7. Remove from the oven and let it cool slightly before serving.

Notes

For a milder version, remove the seeds from the jalapenos before dicing. This dish also freezes well for up to 2 months.
