Delightful Italian cookies bursting with the bright flavors of lemon, perfect for tea time or as an afternoon treat.

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). In a large bowl, cream the softened butter and sugar until light and fluffy.
  2. Beat in the egg, lemon zest, and lemon juice until well combined.
  3. Whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  4. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  5. Bake for 10-12 minutes or until the edges are lightly golden.
  6. Allow to cool slightly before dusting with powdered sugar and serving.

Notes

Store in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks. These cookies freeze well for up to three months.
