A vibrant chicken stir-fry loaded with colorful vegetables and a savory marinade, perfect for a weeknight meal.

  • 1 pound chicken breast, thinly sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 cup bell peppers (various colors, sliced)
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 tablespoon apple vinegar
  • 1 tablespoon sesame seeds

Instructions

  1. Marinate the chicken breast slices in soy sauce and cornstarch for at least 15 minutes.
  2. Heat a large pan or wok over medium-high heat.
  3. Stir-fry the marinated chicken until golden and cooked through, about 5-7 minutes.
  4. Add minced garlic and ginger, cooking for another minute until fragrant.
  5. Toss in the bell peppers, broccoli, and snap peas, and stir-fry until tender-crisp.
  6. Finish with a splash of apple vinegar and sprinkle sesame seeds over the top before serving.
