A flavorful and aromatic dish of roasted cabbage infused with Indian spices. Perfect as a side or a main dish.

  • 1 medium cabbage, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt, to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the olive oil, cumin seeds, turmeric powder, garam masala, and salt.
  3. Using a brush or a spoon, generously brush the cabbage wedges with the spice mixture on all sides.
  4. Place the seasoned cabbage on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, or until the edges are golden and crispy.
  6. Remove the cabbage from the oven and garnish with fresh cilantro if desired.
  7. Serve hot as a side dish or as a main course.

Notes

Feel free to experiment with additional spices. Cut cabbage evenly for uniform cooking. Leftovers can be stored in an airtight container for up to 3 days.
