A vibrant and spicy dish featuring juicy chicken and mixed vegetables in a bold sauce, perfect for quick weeknight dinners.

Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons chili paste
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken breast and stir-fry until cooked through, about 5-7 minutes.
  3. Add the minced garlic and mixed vegetables, and stir-fry for another 3–4 minutes until the vegetables are tender.
  4. Mix together the soy sauce, chili paste, and sugar. Pour the sauce over the chicken and vegetables, and stir well to combine.
  5. Cook for an additional 2 minutes, allowing the sauce to thicken slightly.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with green onions.

Notes

This dish pairs well with jasmine rice or quinoa. Adjust chili paste for desired heat level.
