A Southern classic cake featuring bananas, pineapples, and nuts, perfect for gatherings and celebrations.

Ingredients

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 can (8 oz) crushed pineapple, drained
  • 2 cups mashed bananas (about 4 ripe bananas)
  • 1 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour three 9-inch round cake pans.
  3. In a large bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.
  4. In another bowl, combine the vegetable oil, eggs, and vanilla extract.
  5. Stir in the crushed pineapple, mashed bananas, and chopped nuts into the wet mixture.
  6. Gradually mix the wet and dry ingredients together until just combined.
  7. Divide the batter evenly among the prepared pans.
  8. Place the pans in the preheated oven and bake for 25-30 minutes.
  9. Allow cakes to cool in pans for about 10 minutes, then turn them out onto wire racks.
  10. Once completely cool, frost with cream cheese frosting.

Notes

Make sure ingredients are at room temperature. The riper the bananas, the sweeter the cake.
