Honey Peach Cream Cheese Cupcakes

Delightful cupcakes infused with fresh peaches and cream cheese, topped with a honey frosting.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup cream cheese, softened
  • 1/2 cup diced fresh peaches
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup powdered sugar (for frosting)
  • 2 tbsp honey (for frosting)
  • 12 tbsp milk (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. Cream the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the softened cream cheese and vanilla extract until smooth.
  5. Combine the flour, baking powder, and salt in a separate bowl and add to the wet mixture until just combined.
  6. Fold in the diced fresh peaches.
  7. Fill each cupcake liner with the batter, about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool the cupcakes completely.
  10. Prepare the frosting by mixing the powdered sugar, honey, and milk until smooth.
  11. Frost the cooled cupcakes and top with additional peach slices if desired.

Notes

Store any leftover cupcakes in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
