A delightful and moist zucchini bread recipe perfect for summer, filled with spices and options for added crunch.

Ingredients

  • 2 cups grated zucchini
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the grated zucchini, sugar, and vegetable oil in a large bowl.
  3. Crack in the eggs and pour in the vanilla extract. Stir until combined.
  4. Whisk together the flour, baking soda, baking powder, ground cinnamon, salt, and ground nutmeg in another bowl.
  5. Slowly add the dry ingredients to the wet mixture, mixing until just combined.
  6. If desired, fold in chopped walnuts or pecans.
  7. Pour the batter into the greased loaf pan.
  8. Slide the loaf pan into the preheated oven and bake for 50-60 minutes.
  9. Allow the loaf to cool in the pan for a few minutes before transferring it to a wire rack.

Notes

Make sure to drain excess moisture from the grated zucchini to avoid a soggy loaf.
