  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups ice cream (your choice of flavor)
  • Chocolate chips or sprinkles (optional, for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) while you prepare your dough.
  2. Mix together the all-purpose flour, baking soda, and salt in a bowl.
  3. Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  4. Add the eggs one at a time, then stir in the vanilla extract.
  5. Blend the dry ingredients into the wet mixture to form a dough.
  6. Shape the cookies by dropping spoonfuls of dough onto baking sheets lined with parchment paper.
  7. Bake for 10-12 minutes or until golden at the edges.
  8. Cool the cookies on a wire rack.
  9. Assemble your sandwiches by placing ice cream between two cookies.
  10. Optional: Roll the edges in chocolate chips or sprinkles.
  11. Chill the assembled sandwiches in the freezer for about 30 minutes before serving.
