A delightful twist on classic cinnamon rolls, this Homemade Cinnamon Roll Cake is easy to make and perfect for brunch or a cozy afternoon coffee break.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 cup powdered sugar
  • 23 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Mix together the flour, granulated sugar, baking powder, and salt in a large bowl.
  3. Add the softened butter, milk, eggs, and vanilla extract to the dry ingredients and mix until well combined.
  4. Prepare the cinnamon sugar by mixing together the brown sugar and cinnamon in another bowl.
  5. Pour half of the cake batter into the prepared baking dish and sprinkle with half of the cinnamon sugar. Pour the remaining batter over the top and finish with the rest of the cinnamon sugar.
  6. Swirl through the batter gently with a knife to create a marbled pattern.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Whisk together the powdered sugar and milk for the icing while the cake is baking.
  9. Drizzle the icing over the cooled cake and serve warm or at room temperature.

Notes

This cake pairs perfectly with coffee or tea and can be enhanced with whipped cream or vanilla ice cream.
