A delightful one-pan cake that captures the essence of cinnamon rolls, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 cup powdered sugar
  • 12 tablespoons milk (for icing)
  • 1 teaspoon vanilla extract (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Mix together the all-purpose flour, granulated sugar, baking powder, cinnamon, and salt.
  3. Combine the milk, melted butter, eggs, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour half of the batter into the greased baking dish.
  6. Mix the brown sugar and ground cinnamon, and sprinkle over the first layer of batter.
  7. Pour the remaining batter over the cinnamon sugar layer and swirl gently with a knife.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Mix powdered sugar, milk, and vanilla for icing and drizzle over the cooled cake.

Notes

For a richer taste, replace unsalted butter with applesauce for a lower-fat version.
