A cozy twist on classic mac and cheese, packed with protein from cottage cheese and cheddar, made effortlessly in a crockpot.

Ingredients

  • 2 cups macaroni
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1/4 cup butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs (for topping)

Instructions

  1. Cook the macaroni according to the package instructions until it’s al dente; then, drain it and let it stand.
  2. Mix the drained macaroni with cottage cheese, shredded cheddar cheese, milk, melted butter, salt, and pepper in a mixing bowl.
  3. Transfer the mixture into the crockpot and spread evenly.
  4. Set your crockpot to low and cook for 3-4 hours.
  5. Sprinkle the breadcrumbs on top in the last 30 minutes of cooking.
  6. Serve warm and enjoy.

Notes

For best results, under-cook the pasta slightly. Feel free to experiment with different cheeses or add cooked chicken or veggies.
