A delicious and simple dish featuring crispy herb-crusted salmon paired with tender roasted baby potatoes.

Ingredients

  • 4 salmon fillets (6 oz each, skin-on or skinless)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • Fresh parsley or dill, for garnish
  • Baby potatoes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together 2 tablespoons of olive oil, 2 cloves of minced garlic, 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, ½ teaspoon of paprika, and a sprinkle of salt and black pepper in a bowl.
  3. Brush the salmon fillets generously with the herb mixture.
  4. Arrange the baby potatoes on a baking sheet, tossing them with salt and olive oil.
  5. Place the salmon fillets on the same baking sheet among the potatoes.
  6. Roast everything in the oven for 15-20 minutes until the salmon is cooked through and the potatoes are tender.
  7. Garnish with fresh parsley or dill before serving.

Notes

For extra crunch, broil the salmon for the last few minutes of cooking. Use parchment paper or a well-greased baking surface to prevent sticking.
