Delicious cookies that combine the rich flavors of Kentucky butter cake with a chewy, soft texture.

  • 2 ½ cups (310 grams) all-purpose flour
  • 2 large eggs
  • 1 cup (225 grams) unsalted butter, softened
  • 1 cup (200 grams) granulated sugar
  • ½ cup (100 grams) powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp butter extract (optional)
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup (115 grams) unsalted butter
  • ¾ cup (150 grams) granulated sugar
  • ¼ cup (60 mL) water
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream the softened butter with granulated and powdered sugars until light and fluffy.
  3. Add eggs one at a time, then incorporate vanilla and optional butter extract.
  4. Fold in all-purpose flour, baking powder, and salt, mixing minimally.
  5. Roll the dough into 1.5-inch spheres and place on baking sheets, flattening gently.
  6. Bake for 10-12 minutes until edges are set and centers are slightly underdone.
  7. Cool cookies on baking sheets for about 5 minutes before transferring to a wire rack.
  8. Melt butter in a saucepan, add sugar and water, stirring until dissolved, then remove from heat and stir in vanilla.
  9. Glaze the warm cookies with the prepared mixture.
  10. Cool completely before serving.

These cookies can be stored in an airtight container for up to a week or frozen for three months.
