A healthy and hearty turkey meatloaf that’s easy to make and packed with flavor.

Ingredients

  • 1 lb ground turkey
  • 1 cup rolled oats
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 egg
  • 1/4 cup ketchup
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ground turkey, oats, diced onion, diced bell pepper, minced garlic, egg, half of the ketchup, salt, pepper, oregano, and thyme in a large bowl.
  3. Transfer the mixture to a loaf pan, shaping it into a loaf form.
  4. Spread the remaining ketchup over the top of the loaf.
  5. Bake for 50-60 minutes or until the internal temperature reaches 165°F (74°C).
  6. Let the meatloaf rest for a few minutes before slicing.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can freeze individual slices for up to 3 months.
