Delicious and nutritious muffins made with eggs, fresh vegetables, and cheese, perfect for a healthy breakfast.

Ingredients

  • 6 eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup cherry tomatoes, diced
  • 1 bell pepper, diced (any color works!)
  • 1/2 cup cheese (cheddar, feta, or your favorite)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk the eggs in a large mixing bowl. Add salt and pepper.
  3. Add the chopped spinach, diced tomatoes, and bell peppers to the egg mixture.
  4. Grease a muffin tin with spray or oil.
  5. Fill each muffin cup with the egg mixture, filling them about 3/4 full.
  6. Add cheese on top of each muffin if desired.
  7. Bake in the preheated oven for 20-25 minutes until set and golden.
  8. Cool slightly before removing from the tin and serve warm or at room temperature.

Notes

These muffins can be stored in an airtight container in the fridge for up to 5 days or frozen for up to 3 months.
