  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/2 cup natural sweetener (like erythritol or honey)
  • 1/2 cup unsweetened applesauce
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. Combine the almond meal, baking powder, baking soda, cinnamon, and salt in a mixing bowl.
  3. Whisk the eggs, sweetener, and applesauce together until smooth.
  4. Mix the dry ingredients into the wet mixture until combined.
  5. Fold in the grated carrots, walnuts, and raisins (if using).
