A warm, delicious Sweet Hawaiian Crockpot Chicken that brings the taste of paradise home with juicy chicken thighs and tangy pineapples.

Ingredients

  • 2 lbs chicken thighs or breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 bell pepper, sliced (optional)
  • Salt and pepper to taste

Instructions

  1. Combine the pineapple chunks, soy sauce, brown sugar, ketchup, garlic, and ginger in a slow cooker.
  2. Toss in the chicken and gently stir to coat.
  3. Add sliced bell peppers on top if desired.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Shred the chicken right in the sauce using two forks and serve.

Notes

Feel free to customize the sweetness and add more vegetables. This dish can also be made stove-top by simmering for about 40 minutes.
