  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • Salt and pepper to taste
  • Cooked rice or quinoa, for serving
  • Optional toppings: shredded cheese, avocado, sour cream, cilantro

Instructions

  1. Sautéing the Onions: In a skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, stirring occasionally to avoid browning. This will take about 4-5 minutes.
  2. Browning the Turkey: Next, add the minced garlic and ground turkey to the skillet. Cook until the turkey is no longer pink, breaking it apart as it cooks for even browning—about 7-8 minutes.
  3. Blending the Flavors: Stir in the taco seasoning, black beans, corn, and diced tomatoes. Cook everything on medium heat until heated through, about 3-4 minutes.
  4. Plating Up: Serve the turkey mixture over your choice of cooked rice or quinoa.
  5. Garnishing & Enjoying!: Add your favorite toppings—shredded cheese, avocado, sour cream, or a sprinkle of fresh cilantro.
