A healthy and comforting dish of bell peppers filled with a savory mixture of ground turkey, rice, and tomatoes.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the peppers and remove the seeds to create little vegetable cups.
  3. In a skillet, cook the onion and garlic until softened, releasing their beautiful aromas.
  4. Add the ground turkey to the skillet and cook until browned, breaking it up with a spatula as it cooks.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper, ensuring everything is well combined.
  6. Generously stuff the turkey mixture into the bell peppers, packing them to the brim.
  7. Place the stuffed peppers in a baking dish and pour a little water into the bottom of the dish to keep them moist.
  8. Cover the dish with foil and bake for 25 minutes, allowing the peppers to soften.
  9. If using cheese, remove the foil, sprinkle cheese on top of the peppers, and bake for an additional 10 minutes until the cheese is melted and bubbly.
  10. Serve hot and enjoy your delicious creation!

Notes

Great to customize with leftover ingredients or to make vegetarian by substituting the turkey with lentils or quinoa.
