A comforting skillet dinner featuring ground turkey and colorful vegetables, packed with flavor and nutrients.

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic, cooking until softened.
  3. Add the bell pepper and zucchini, cooking for another 5 minutes.
  4. Push the vegetables to one side of the skillet and add the ground turkey, cooking until browned.
  5. Stir in the diced tomatoes and Italian seasoning.
  6. Season with salt and pepper to taste.
  7. Simmer for 10 minutes to allow the flavors to meld.
  8. Serve over cooked rice or quinoa.
