Savory ground beef enchiladas enveloped in soft tortillas, smothered in rich enchilada sauce and topped with melted cheese.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Optional toppings: sour cream, green onions, cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the ground beef, onion, and garlic in a skillet over medium heat until browned.
  3. Stir in diced tomatoes and season with salt and pepper; let simmer.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Assemble each tortilla with a portion of the beef mixture and shredded cheese, then roll them up.
  6. Pour the remaining enchilada sauce over the rolled tortillas and top with cheese.
  7. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes.
  8. Serve hot with optional toppings.

Notes

You can substitute ground beef with ground turkey or vegetarian ingredients. Warm tortillas before assembling to prevent tearing.
