Delicious and hearty ground beef enchiladas baked with a savory sauce and topped with melted cheese.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the ground beef, onion, and garlic in a skillet over medium heat until browned.
  3. Mix in half of the enchilada sauce and the black beans, seasoning with salt and pepper.
  4. Fill each tortilla with the beef mixture and roll them up tightly, placing seam-side down in a baking dish.
  5. Assemble with the remaining enchilada sauce and shredded cheese on top.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly.
  7. Garnish with chopped cilantro before serving.

Notes

For extra flavor, try a blend of different cheeses. Leftovers can be stored in the fridge for up to 3-4 days or frozen for up to 2-3 months.
