Ingredients

  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • Avocado, for topping
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. Toss the sliced zucchini, bell pepper, red onion, and mushrooms in a bowl with olive oil, cumin, chili powder, salt, and pepper.
  3. Grill the seasoned veggies on the grill for about 5-7 minutes, turning occasionally until charred and tender.
  4. Warm the tortillas on the grill for about a minute until pliable.
  5. Fill each tortilla with grilled veggies and top with avocado and cilantro.
  6. Serve with lime wedges on the side.
