Delicious and vibrant grilled salmon skewers that are perfect for summer gatherings.

Ingredients

  • 1 lb salmon fillets, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 onion, cut into wedges
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Combine olive oil, lemon juice, minced garlic, salt, and pepper to create a marinade.
  2. Add salmon cubes and vegetables into the marinade and let sit for 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated salmon and vegetables onto skewers.
  5. Grill skewers for 8-10 minutes, turning occasionally, until salmon is cooked through and flaky.
