Ingredients

Scale
  • 1 pound chicken breast, cut into cubes
  • 2 bell peppers, cut into chunks
  • 1 onion, cut into chunks
  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Skewers

Instructions

  1. Create the Flavorful Marinade: In a large bowl, combine the olive oil, soy sauce, lemon juice, garlic powder, paprika, salt, and pepper.
  2. Marinate the Chicken and Vegetables: Add the chicken cubes and vegetables to the marinade, stirring gently to coat everything evenly.
  3. Cover the bowl and refrigerate the marinated chicken and veggies for a minimum of 30 minutes.
  4. Preheat Your Grill: Preheat your grill to medium-high heat.
  5. Assemble the Kabobs: Thread the marinated chicken and vegetables onto skewers.
  6. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally.
  7. Once cooked, remove the kabobs from the grill and let them rest for a minute.

Notes

For best flavor, allow chicken and vegetables to marinate longer. If using wooden skewers, soak them in water for at least 30 minutes before grilling.
