A vibrant and delicious Greek Pasta Salad perfect for summer gatherings, BBQs, and picnics.

Ingredients

Scale
  • 8 ounces pasta (e.g., rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Prepare your pasta according to the package instructions until al dente. Once cooked, drain it well and set it aside to cool.
  2. Combine the Fresh Ingredients: In a large bowl, add the cooled pasta, and then toss in the cherry tomatoes, diced cucumber, red onion, Kalamata olives, and crumbled feta cheese.
  3. Whisk the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
  4. Dress the Salad: Pour the dressing over the pasta salad generously, and gently toss everything together until it’s beautifully coated.
  5. Chill and Serve: You can serve the salad immediately, or for even better flavor, cover it and refrigerate for about 30 minutes to let all those lovely ingredients meld together.

Notes

Make sure to cool your pasta completely before adding the other ingredients to avoid wilting the veggies. Feel free to experiment with seasonal vegetables or add protein for a more filling meal.
